Thai Mince Salad with Mint Leaves

Thai Mince Salad with Mint Leaves

WL/WM

Ingredients:
300g minced pork
1 onion
1 clove garlic
1 tsp chilli flakes
2 sprigs mint with small leaves
2-3 drops lemon oil
1 tbspn groundnut oil
Juice of 1/2 lemon
1 handful lettuce leaves or other salad leaves of your choice
Salt and pepper

Method:
Peel the onion and cut into thin rings. Heat the oil and fry the mince and onions over a medium-low temperature, breaking up the meat to brown right through. Season with salt and pepper and a little lemon oil. Scatter with chilli flakes and mint leaves. Season to taste and serve on lettuce leaves. Dress with lemon juice and serve lukewarm.
