Greek Smoked Salmon with Feta and Olives

Greek Smoked Salmon with Feta and Olives

Ingredients:
400g smoked salmon, fresh
120g Greek feta
16 kalamata olives, deseeded and halved
Olive oil
Salt and pepper
Chopped parsley, for garnish
1 lemon, cut into wedges, for serving

Method:
Break feta into pieces of about 30g each. Place 100g of smoked salmon on top of each piece of feta, folding nicely. Scatter olives over and season with salt and pepper. Sprinkle parsley on top and drizzle with olive. Serve with lemon wedges.

Serves 3-4
