Deliciously tasty, healthy, low fat gourmet recipes: Thai Chicken Balls on Lettuce

Thai Chicken balls on lettuce

WL/WM
WM lunch add 2 limes to garnish

Ingredients:
Approx. 400 g chicken breast fillets
10 shallots
5 fresh chillies (green and red)
3 tbspn fish sauce
Juice of 1/4 a lime
2 pieces of ginger (the size of a walnut)
50g peanuts, roasted and salted (exclude for WL)
1 iceberg lettuce

Method:
Finely chop the chicken and mix with the fish sauce, and lime juice. Marinate for about 30 minutes.

Peel the ginger and shallots and cut into approximately 5mm dice.

Wash and trim the chillies and cut into rings.

Place the ginger, shallots, chilli rings, limes and peanuts in bowls.

Wash and sort the lettuce, spin dry and tear into pieces. Arrange on a large platter.

Cook the marinated chicken in a pan for about 2-3 minutes, stirring. Cool slightly and with moistened hands form into small portions about the size of walnuts. Arrange on the lettuce.

Garnish with a mixture of chilli, lime (WM lunch only) cut into approximately 5mm dice and nuts.

 

Note: WL and WM stand for Weight Loss and Weight Management, the two main phases of the Bodytrim diet. The weight maintainance phase advocates a serve of carbs/starch with breakfast and lunch.
