Italian Stuffed Calamari with Caprioccio Salad

Weight maintenance lunch

Ingredients:
4 medium fresh whole calamari
Olive oil
1/2 loaf of liparesi crusts
Fresh chilli, to taste
1 clove of garlic
A pinch of fresh oregano
1 tbspn parmesan cheese
1-2 dollops of cream
Juice of 1/2 lemon

Capriccio Salad Ingredients:
Radicchio
Pine nuts
Fennel seeds
Olive oil
Balsamic vinegar

Method:
Clean calamari and remove legs. Panfry the legs till very crunchy and golden then place in a blender with the liparesi crusts, chilli to taste, garlic, oregano and parmesan. With the motor running, add the cream but do not let the mixture become runny (it must be chunky). Stuff the calamari with this mixture and seal with a toothpick. Lightly dab calamari with olive oil, season with salt and pepper and grill until slightly golden.

For the salad: Combine the radicchio and pine nuts and sprinkle with fennel seeds. Mix together the olive oil and balsamic vinegar and pour over salad.

To serve, slice the end off the cooked calamari to reveal the stuffing, sit on top of the capriccio salad and drizzle with lemon and any leftover oregano.
