French Roast Mahi Mahi with Eggplant Puree and Sauce Vierge
Eggplant puree Sauce vierge Method: Roast the mahi mahi in a hot oven until done how you like it (try to get a bit of colour in the fish without overcooking it). Just before serving, quickly mix together all of the sauce vierge ingredients. Spoon some eggplant puree onto the serving plates, place the mahi mahi on top and spoon the sauce vierge over. Serves 4-6 * There are many different versions of sauce vierge. It means “virgin sauce” in French, as it is not cooked.
