Deliciously tasty, healthy, low fat gourmet recipes: French Roast Mahi Mahi with Eggplant Puree and Sauce Vierge

French Roast Mahi Mahi with Eggplant Puree and Sauce Vierge

4 x 150g (5oz) pieces mahi mahi

Eggplant puree
1 medium eggplant
1 cup olive oil
Juice of 1 lemon
Salt and pepper

Sauce vierge
2 tomatoes, seeded and diced
1 tspn chopped chives
1 tspn chopped basil
1 tspn chervil
1/4 tspn ground coriander seed
1 tbspn white wine vinegar
3 tbspn olive oil

Method:
For the eggplant puree: Cut the eggplant in half and score the flesh inside. Place on a roasting tray, drizzle over the olive oil, cover with foil and cook in a medium oven for 40 minutes. Allow to cool. Scoop out the eggplant pulp and puree in a food processor, adding the lemon juice, some of the olive oil from the eggplant tray and salt and pepper to taste.

Roast the mahi mahi in a hot oven until done how you like it (try to get a bit of colour in the fish without overcooking it). Just before serving, quickly mix together all of the sauce vierge ingredients. Spoon some eggplant puree onto the serving plates, place the mahi mahi on top and spoon the sauce vierge over.

Serves 4-6

* There are many different versions of sauce vierge. It means “virgin sauce” in French, as it is not cooked.
