Country Lamb Pie

Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 4-6
Ingredients:
1 large brown onion, chopped
1 large carrot, peeled and chopped
2 sticks celery, chopped
2 cloves garlic, chopped
600g minced lamb
3/4 cup Rosella Tomato chutney
1/4 cup beef stock
3/4 cup frozen peas
2 tablespoons chopped parsley
Salt and pepper to season
750g freshly cooked mashed potatoes
1/3 cup cream
60g butter, melted
30g parmesan cheese, grated
Method:
- Heat oil in a large deep frypan, add onion, carrot, celery and garlic, sauté for 5-8 minutes or until soft.
- Add the lamb and stir till browned. Add chutney and stock cook for a further 5-8 minutes.
- Spoon into a greased casserole dish.
- Combine the potatoes with cream, egg and half the melted butter and spread over the meat mixture. Brush with remaining butter and sprinkle with cheese.
- Bake in a hot oven (200c) for 20 minutes or until the filling is piping hot and the top golden brown.
- Serve with steamed green vegetables and extra chutney.
