Country Lamb Pie


Professional Chef, TV presenter and Dad Geoff Jansz has shared some of his great recipes with Mum Zone readers.

Country Lamb Pie

Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 4-6

Ingredients:
1 large brown onion, chopped
1 large carrot, peeled and chopped
2 sticks celery, chopped
2 cloves garlic, chopped
600g minced lamb
3/4 cup Rosella Tomato chutney
1/4 cup beef stock
3/4 cup frozen peas
2 tablespoons chopped parsley
Salt and pepper to season
750g freshly cooked mashed potatoes
1/3 cup cream
60g butter, melted
30g parmesan cheese, grated

Method:

  1. Heat oil in a large deep frypan, add onion, carrot, celery and garlic, sauté for 5-8 minutes or until soft.
  2. Add the lamb and stir till browned. Add chutney and stock cook for a further 5-8 minutes.
  3. Spoon into a greased casserole dish.
  4. Combine the potatoes with cream, egg and half the melted butter and spread over the meat mixture. Brush with remaining butter and sprinkle with cheese.
  5. Bake in a hot oven (200c) for 20 minutes or until the filling is piping hot and the top golden brown.
  6. Serve with steamed green vegetables and extra chutney.
